Vegi pasties
Makes 4 large pasties.
For the dough:
400g plain flour
150g butter
Water – to mix
1 tsp salt
For the filling:
Veg (eg. potato, onion, courgette, tomato, carrots…) chopped into small pieces
Method: To make the dough, rub the butter into the flour (helps if the butter is soft) and then gradually add enough water to bind the dough – without it being wet. leave to one side and prepare the veg. Gently sauté the veg in a little butter in a pan until onions are translucent. Seperate the dough into 4 equal parts – and roll onto a slightly floured / oiled baking tray. Fill with some of the veg, leaving a couple of cm’s around the edge. Fold over the dough, crimple together, brush with some egg and then bake at 200 C for about 40 minutes.
